breakfast for lunch!
ever wake up at 1:30 PM for no reason? if you answered yes, this may be the perfect lunch for you, as it was for me!
we’ve tried a few vegan french toast recipes before, you know, the ones using banana, some using pumpkin, and others too. while all of them were great, and have their own unique flavors, this one mimics classic french toast the best, in my humble opinion. on top of that, it uses even more common ingredients, and doesn’t require anything beyond a fork, a bowl, and a griddle pan. awesome!
in a bowl, thoroughly mix, until it’s the consistency of a thin batter:
- 4-5 cups unsweetened soy milk
- 2 tbsp flour
- 4-5 tbsp applesauce
- cinnamon, ground clove, nutmeg, brown sugar, and pumpkin pie spice, if you have it
then just dip some thick, crusty bread in the liquid, and brown on your pan, using low heat to ensure even cooking and most importantly, no burning!
