1. amazing lasagne with asparagus
this lasagne is an exact replica of the kind your mom used to make for you. or still makes for you, whatever. but seriously, we couldn’t believe how much this tasted like a real cheese lasagne.
what you’ll need:
about 10 strips of lasagne - it depends on how big they are, though, so just measure things out if you don’t want to make more than you need.
28 oz. crushed tomatoes, mixed with oregano, thyme, and parsley
2 cups black beans
1 recipe cashew cheese (about 2 or 3 cups, if you’re not making our recipe)
cook the noodles until they’re al dente. cook the black beans (if they’re dried).


start with a layer of tomato sauce, a layer of pasta, then some sauce, some cheese, then beans. then repeat the pasta-sauce-cheese-beans layers until the pan is filled.
on the top, we layered some asparagus, and brushed them with a mixture of olive oil, salt, and a little molasses.

cook in a 400F oven until the asparagus is cooked through, and enjoy!
