1. rainbow salad with oyster mushrooms
this a really fun-looking salad with lots of spicy & sweet flavors. it includes:
rainbow chard, which is a good source of vitamins, minerals, protein, and calcium
oyster mushrooms, lightly steamed. they were on sale so i had to buy them! they’re pretty mushrooms, and the texture is a tougher than its slimy brother, a simple white button mushroom.
currants and sunflower seeds
a splash of orange and lemon, along with some zest
1-2 tsp olive oil

2 tsp-full of a hot pepper. i used this pepper, which i’m not sure what it is quite yet. i’m pretty sure they’re scotch bonnet chiles based on their appearance & heat.
try any variation on this or any other salad we make here. the fun part is experimenting with new combinations!
