an easy salad: make some cashew cheese and put it in the fridge for at least 15 minutes. chop up some greens and toss them in a teaspoon or two of apple cider vinegar. slice two medium tomatoes. put the greens in the bowl, then alternate between tomato slice & spoonful of cashew cheese. enjoy!
