  2. currently inhaling: strawberry cupcakes with vanilla buttercream frosting
recipe here! the frosting is just 2 cups confectioner’s sugar & 1/2 cup non-dairy butter, with a splash of rice milk. the fresh strawberries on top really made these cupcakes outstanding.

  3. vanilla cupcakes with pink lemonade frosting!
truly a fun, spur-of-the-moment sort of dessert. we used the other half of the cranberry mixture we set aside in the cranberry jam post, so go there first if you want to make these!
the cupcakes are just a vanilla cupcake recipe, the only difference was that we substituted the water - use the water leftover from boiling the cranberries for a different taste.
the frosting is very simple and way better than we expected it to be. whip these ingredients with a mixer until it’s thick, glaze-like consistency:
3 cups confectioner’s sugar
3/4 cup cranberry mixture, ground into an even paste in the food processor
1/3 cup non-dairy cream cheese (optional, just gives it a creamier texture)
1/4 cup non-dairy butter
1/2 of a juiced lemon
we decorated each of ours a little differently, try new ways to flavor yours as well!
