- several cups of chilled tea with lemon. let’s get this day started!
- some green banana smoothies (lots of frozen spinach, a ripe banana, 1/2 cucumber, and some non-dairy yogurt c/o so delicious)
- some “everything we’ve got in the pantry” sort of granola bars. you can find a great granola bar recipe in the latest issue of our magazine.

easy ribbon salad
this is a pre-spring favorite of mine - lots of fresh veg, peeled into thin strips and tossed with a creamy dressing, in this case it’s a creamy lemon dill dressing. all of this comes together within a few minutes, and it’ll get you dreaming of walking barefoot on the grass again. (though thankfully that’s already happening in animal crossing!)
salad // peel into thin strips a few asparagus stalks, some broccoli stalks, and cucumber. toss in some chives and pea shoots. if you’re up for it, throw in sliced almonds and some quick-pickled onions. (you can get the recipe for them in the spring roll feature of the spring issue of chickpea mag.)
a tip: get thick versions of the veg mentioned, it’ll make peeling a lot easier. also, if you can, go for organic since you’ll be eating the skins of the veg.
dressing // stir together until consistent 2 tbsp hummus, 1 tbsp olive oil, 1-2 tbsp apple cider vinegar, the juice of 1 small lemon, a heaping pinch fresh dill, minced, and some minced chives.
the dressing serves four, and you can make as much or as little of the salad depending on how many people you’re feeding. if you’d like to make it heartier, add some rice noodles or white beans. enjoy it! :)
