Here’s a quick, simple salad that I devoured this morning for breakfast. It’s got crunchy little white radishes, light soft kale, and crisp pears, and it’s great for any time of the day. Today I got to eat it outside, without having to wear a jacket or anything!

This salad looks beautiful and has great complex flavors. It’s a good mix between summer salads and autumn roasts, with hearty, sweet beets and savory cauliflower and mushrooms. Oh, and it takes less than 30 minutes to make. (Just call me Rachel Ray.)

this simple salad is one of my favorite food staples. fresh, light greens, chopped herbs, thin-sliced cucumber, grape tomatoes, and some crumbled spiced tofu make for some tasty summer eating.
i usually crumble some super firm (not extra firm, super firm, the kind by wildwood) tofu and shake it in a bag with some salt, pepper, nutritional yeast, and sesame seeds.
finish it off with a quick dressing of one part vinegar, two parts oil, and your fav herbs and S&P.
